Cakalang fufu

Cakalang fufu or cakalang asap or smoked skipjack tuna is processed indigenous food of Minahasa society in North Sulawesi, Indonesia, made from tuna fish (Katsuwonus pelamis) flavored, clamped using bamboo framework and smoked on fire. This food is a traditional way of preserving sea fish and if processed properly can be stored in room temperature for one month to be distributed throughout the world.

Skipjack fufu has a soft texture and can be eaten directly or processed then into a variety of dishes where in general for the rica-rica skipjack tuna, pampis skipjack tuna, noodle skipjack tuna, grilled rice skipjack tuna and others without reducing the peculiarity of taste.

Skipjack tuna has a length of about 50 cm. The largest skipjack tuna can be up to 1 meter and weighs over 18 kg. Fish cleaned where the stomach and scales removed, then the meat split into two parts and then clamped using bamboo.

Meat is doused in salt and soda powder, then roasted over a fire generated by coconut fibers readily available in Sulawesi and produces more smoke than wood. This treatment is done evenly until cooked and completely dry for about 4 hours.

Cakalang fufu will have a soft texture, dry and red. The process is done exactly will produce a product that can be stored for a month. This food is a favorite dish in Minahasa culture and favored by tourists visiting North Sulawesi.

These foods can be eaten directly or heated and fried in hot oil. Minahasa people generally eat directly with rice and dabu-dabu or sambal. The pieces of skipjack fufu can be added in various dishes such as rica-rica cakalang, pampis cakalang, mie cakalang, nasi bakar cakalang and others.

Cakalang fufu is produced throughout North Sulawesi, but the production center is Bitung City as the largest fishing port city in Sulawesi with direct access to the Pacific Ocean. Timang Beach
