Gudeg or gudheg is a traditional Yogyakarta cuisine made from green jackfruit boiled for hours in coconut milk and teak leaves to produce a savory taste and brown. Gudeg served with rice and generally also included areh or thick coconut sauce, fried chicken, boiled eggs, boiled tofu, boiled tempe and krecek or fried cow skin.

Gudeg was first popularized in the 1500s where the Mataram Kingdom was founded. This cuisine was originally to feed the workers while building the kingdom in Kotagede or Yogyakarta today where jackfruit trees and teak trees were abundant at the time.

Gudeg is made from raw material of green jackfruit which is cut into small pieces and boiled in coconut milk and various spices. This food has three variants are dried gudeg which is served in very thick areh, wet gudeg which is served in very dilute areh and white gudeg that does not use teak leaves where food has white color feature.

Spices include coconut sugar, cane sugar, bay leaf, teak leaves, galangal, garlic, onion, coriander, candlenut and salt. The blend is cooked into coconut milk and green jackfruit to boil for 4 hours. Food will be stored for 1 to 3 days before serving.

Some restaurants in Yogyakarta still use traditional methods of cooking and serving. They use a cauldron or pan made of thick clay on a fire from firewood to boil where using this method will make the texture more soft and legit.

This food is usually served with rice, fried chicken, boiled eggs, boiled tofu, boiled tempe, krecek and chili. Krecek made from fried cowhide into a stack, then pan-fried with chili so it has a spicy flavor and serves as a sauce.

Gudeg is very easy to find in Yogyakarta, one of the selling centers of gudeg is in the area of Wijilan which is not too far from Kraton Yogyakarta. Timang Beach
