Kepiting soka crispy or fried soka crabs is traditional snacks by North Borneon in North Kalimantan Province, Indonesia, using the main ingredients of soka crab kepiting lemburi or mangrove crabs or giant mangrove crab (Scylla serrata) wrapped in flour, spices and fried.

A crab snack is very crispy and tender, although it includes all the crab including soft shells, and usually served with a spicy sauce or sweet sauce. This food is very popular in north Borneo especially in Tarakan City which is located on the coast.

These crabs live in the mangrove forests found mostly on the coast of Borneo where Borneon heredity caught for a variety of seafood dishes. But now they prefer to cultivate these crabs in swamp ponds for production continuity.

Soka crabs are often referred to as 'soft shell crab' which has a soft shell of skin or moulting. Newly changed shells are still soft when captured and can be eaten without needing to peel as done on other types of crabs.

Spices used to make fried soka crabs are wheat flour, cornstarch, garlic, pepper powder, and salt. Crabs that have been clean dipped in chicken eggs, then sprinkled with spices and fried using cooking oil.

Timang Beach
